Strawberry Fruit Leather

  • 1 ½ lbs. ripe organic strawberries
  • ¾ cup sugar

Puree the berries with the sugar in a blender until smooth. Strain through a fine mesh strainer. Pour into a saucepan and heat to boiling, then reduce the heat an simmer for about 45 minutes, or until thick.

Preheat the oven to 200°F. Pour the berry mixture onto a Silpat-mat-lined baking sheet and spread it out in an even layer. Dry in the oven until it is tacky and sticks, 2-3 hours. Allow to cook for at least 3 hours before eating. Once well-cooled, it may be cut and placed on parchment paper and then plastic wrap, and made into “fruit roll-ups” for lunchbox use. They won’t last forever, they may get a bit sticky over time, but that’s what happens when you don’t use any preservatives. They won’t last anyway…they’re too good!
