Yield: about 24 pieces
- 2-4 heads. little gems lettuce, depending on size
- 1 small basket cherry tomatoes
- 6 slices bacon, cooked, crumbled
- 1 avocado
- 1 lemon
Wash Little Gems after cutting from the base, and pat dry. Cook bacon and crumble Halve cherry tomatoes, dice avocados and lightly sprinkle with lemon to keep from browning. Just before serving, toss lightly together bacon, avocado, cherry tomatoes and put a spoonful in each leaf for serving.
Options: this also tastes wonderful with some added blue cheese, but don’t toss it with the other ingredients, crumble a bit on top. It will turn the avocado brown otherwise.
