- 8 oz butter, room temperature
- 2/3 cup sugar
- 1 egg (or 2 yolks)
- ½ tsp salt
- 1 Tbs. vanilla
- 2 ½ cups unbleached all-purpose flour
Cream together the butter and sugar in a mixer. Add the egg and vanilla. Sift the flour and salt together, and mix into the butter mixture until blended. Chill at least ½ hour. Roll out ¼ inch thick. Cut out shapes and bake at 350F until just browned at the edges, about 8 minutes.
Add 2 tsp. finely grated lemon zest in dough and slightly decrease flour.
Roll balls of sugar dough in cinnamon sugar. Flatten slightly on sheet pan and bake.
