Winter soups from Southern Italy

What better way to enjoy a cold winter day than with a hearty soup?  Join me and learn how to make a tasty chicken broth that we will use in our first soup, chicken broth flavored with tiny meatballs made out of fresh homemade ricotta.  We will follow with a creamy chick pea soup flavored with shrimp broth.  The next two soups are full of flavor and truly highlight the simplicity of soups made in Southern Italy using only vegetables and water.  A velvety cauliflower soup and a stew of cannellini beans and celery, my husband’s favorite soup from Sicily. We'll finish it off with a wonderful dessert, poached pears stuffed with a sweet ricotta cream.

Pere Cotte al Vino Bianco (Poached pears filled with ricotta cream and served with chocolate sauce)

Paulding & Company Cancellation Policy

Refunds are only issued when we are notified 5 or more days prior to a class, or for classes that fill and have a waitlist. If you cancel less than 5 days, but more than 48 hours before a class, a credit towards a future class will be issued, but you must notify Paulding & Company and receive confirmation within that time frame. If you must cancel less than 48 hours before a class, you may send someone in your place. We regret that no credit can be issued for late cancellations or missed classes. Please note that some teachers have individual policies that differ, be sure to read these when you register!
