Cooking and eating can be a total sense experience, engaging to the eyes, ears, nose, fingers, and palate.
This class will focus on the visual appeal of our food and how that plays into our experience of emotional and physical satisfaction. We will rely heavily on fresh, locally grown produce, with the supporting cast of proteins, legumes, dairy products, etc.
Our finished dishes will be made from scratch, starting with whole foods as much as possible, to give us a true appreciation for the foods themselves, and the dishes that they inspire. Think hand-milled flour tortillas with a confetti of grilled vegetables and meats, pepitas mole, pickled radishes, and fresh grown herbs, OR summer tomato and golden beet salad, blackened baby purple carrots seasoned with spicy harissa, yogurt tahini saffron sauce, and homemade farmer’s cheese… We will let the summer harvest and our imaginations inform our menus for the week.
