Rosetta Costantino, a cooking instructor, author and consultant, was born and raised in Verbicaro, Calabria, a small wine-producing town at the southern tip of the Italian peninsula. Rosetta moved to the Bay Area with her parents at age 14. They still grow their own produce, make their own ricotta, and cure their own salsiccia calabrese. Assisted in class by her mother, Maria, she shares her deep knowledge of the foods of her youth and her family life with her students, teaching holiday delicacies, ricotta making, and preserving summer's bounty, plus introducing foods from other regions of Southern Italy, including Sicily, Basilicata, Puglia, and Campania. Her best-selling cookbook, My Calabria, published in 2010 and was nominated for an IACP award. Currently, Rosetta is hard at work on a new Desserts book.
